Chinese chicken and potatoes

  • 4 medium potato cut into small chunks

  • 4 chicken breast cut into chunks

  • 1 red pepper deseeded and cut into large cubes

  • 100g baby sweetcorn cut in half lengthways

  • 3 spring onions finely sliced

  • 2 tbsp hoisin sauce or plum sauce


  1. Preheat the oven to 200C/Gas Mark 6.
  2. Place all ingredients (except spring onions) onto a large baking tray or two smaller ones.
  3. Toss together to coat all the ingredients in the sauce.
  4. Spread out into one single layer on the tray(s).
  5. Place in the oven and cook for 25-30 minutes until browned and tender.
  6. Serve scattered with spring onions.

    Made this but with a can of sweetcorn instead of baby sweetcorn, was absolutely delicious. Highly recommend as a quick and easy meal.

    I regularly cook something like this but I aldo use a small carton of orange juice, also I use at least half a jar of hoi-sin. It is absolutely delicious.

    I would sprinkle with sesame seeds about 20 minutes through the oven cooking part - a touch of authentic Chinese and additional vitamin value too!
