  • 1 tsp vanilla extract

  • 230ml milk

  • 2 tsp baking powder

  • 115ml rapeseed oil or vegetable oil

  • 45g cocoa powder

  • 115g golden caster sugar

  • 1 medium eggs

  • 115g chocolate chips or chunks

  • 170g plain flour

  • 50g dried black cherries


  1. Heat the oven to 200C.
  2. Place the dry ingredients in a bowl and briefly mix them together.
  3. In a separate bowl whisk the wet ingredients together. Mix the wet and dry ingredients together until just combined, don't over stir the mixture or it will go tough. Fold in the cherries.
  4. Divide into 12 muffin cases and cook for 20 minutes or until they have risen and split and are springy to the touch.
