  • 225g self-raising flour

  • 225g butter

  • 3 tbsp honey

  • 2 large eggs

  • 1 drop of milk (optional)


  1. Preheat oven to 180C/Gas Mark 4.
  2. Melt butter and honey in a small pan.
  3. Sieve flour into a large bowl.
  4. Beat eggs in a separate bowl.
  5. Stir first the butter and honey mix then the eggs into the flour. If necessary add a drop of milk.
  6. Spoon your mixture into cup cake cases and bake for about 15 minutes or until golden and firm.

Handy Hint

I used runny honey, not sure how different they would be with set honey?

    I wish I had read the first comment before baking these! I think the butter to flour ratio is off. I substituted organic coconut oil for butter. Didn't quite get a puddle but they are way too moist. I had a feeling when i was measuring it out there was too much liquid for the dry ingredients, should have listened to myself. Will try them again with less oil/butter!

    I tried this recipe this evening. I have just taken the cakes out if the oven and they are all sitting in a puddle of fat. The amount of butter is very wrong I'm afraid.

    I made these fairy cakes for one of the guests at my son's 6th birthday party who was on a sugar free diet. They were so simple to make and very moist and tasty. But most of all the child who normally never partakes in the cake eating part of parties was able to join in!
