1 tbsp tomato puree
3 tbsp cheese grated
100g ham diced
1 breakfast muffin
- Slice a muffin in two and slightly toast.
- Finely slice the onions, mushroom and peppers and cook until soft in a pan.
- Spread the tomato over the muffin and then cover with the onion/mushroom/pepper mix.
- Sprinkle on diced ham and grated cheese.
- Toast under the grill until the cheese is melted.
Spreading thee tomato with a teaspoon rather than a knife lets you spread it quickly and evenly.
