  • 120g butter (chilled and cubed)

  • 160g sugar

  • 0.5 lemon zested

  • 100g wholemeal flour

  • 1kg cooking apple

  • 1 handful porridge oats

  • 5 dried apricots finely chopped

  • 100g plain flour

  • 1 tbsp lemon juice


  1. Pre-heat oven to 180C.
  2. Sieve the flour into a mixing bowl.
  3. Add the butter and 'rub in' until you have a mixture that resembles large bread-crumbs.
  4. Add 80g of sugar and mix well.
  5. Refrigerate.
  6. Peel and core the apples - chop into chunks.
  7. Add the lemon zest, juice and remaining 80g sugar.
  8. Put the apple mixture in a shallow oven proof dish, sprinkle the chopped apricots over the apples.
  9. Take the crumble mixture, add the oats and mix.
  10. Cover the apples with the crumble and bake in the oven for 40 minutes.

Serve with cream, custard or ice cream.

Handy Hint

A great fairly non-messy recipe to let the little ones help with.
apples can be substituted wiht rhubard, plums and you can add raisins and other dried fruit

    I substituted the apricots for raisins. It fed 2 generous adult portions and 4 child sized too.
