Apple-glazed turkey

  • 1/2 tsp salt

  • 1/2 tsp ground cinnamon

  • 1 turkey

  • 165g apple jelly

  • 1/2 tsp ground red pepper


  1. Heat oven to 160C, and remove giblets and neck from cavity.
  2. Place giblets and neck (not the liver) in the roasting pan.
  3. Place rack in pan and put turkey on rack. Roast turkey until the skin is browned, about 2½ -3 hours.
  4. Tent turkey with aluminum foil. Continue to roast for about ½ hour more.
  5. In a small pot, melt apple jelly. Stir in cinnamon and pepper to mix. Brush turkey with apple glaze and broil about four inches from heating element for about three minutes, until browned and bubbly.
  6. Remove turkey from oven, tent loosely with aluminium foil, and let it rest for 30 minutes before carving.
