Cheat's meatballs and mash

  • 1 onion (large) peeled and chopped

  • 1 potato mashed with butter and milk

  • 2 tins chopped tomato

  • 2 cloves garlic peeled and crushed

  • 2 tbsp plain flour

  • 1 tsp dried Italian seasoning

  • 12 meatballs (uncooked)


  1. Roll the meatballs in flour.
  2. Heat the olive oil in a large pan and fry off the meat balls until browned., then remove from the pan.
  3. Add a little more oil and then fry off the onions and garlic, until soft.
  4. Return the meatballs to the pan with the tinned tomatoes and herbs and simmer for 20-30 mins until well cooked.
  5. In the meantime make your mash (no explanations needed!). Serve and enjoy!

    I love this as everyone in my family will eat it. You can quite easily make variations to it if you want - sometimes I split the sauce half way through and add peppers and spices to the tomato mixture to the 'adult' version to make a spicy meatball dish. Alternatively you can hide vegetables in the sauce to ensure that your little ones are getting their 5 a day. It is also v quick to make - much easier than making the meatballs from scratch!
