Easy veggie risotto

  • 1 onion (optional)

  • 1l vegetable stock hot

  • 300g risotto rice

  • 100g frozen peas

  • 6 slices vegetarian bacon sliced


  1. Chop onion and fry in a little bit of butter or oil for 5 minutes. If your little ones don't like onions then just leave it out.
  2. Add and fry the veggie bacon for 1-2 minutes (do not overcook).
  3. Add rice and stock and bring to the boil (you can also add any herbs and spices you like at this point). Stir well and cook covered for around 15-20 minutes or until rice is nearly tender.
  4. Add peas and cook for a further couple of minutes until the peas are cooked (for tinned this doesn't take as long). Add salt (I usually don't bother with this bit so it's that little bit healthier) and pepper to taste.

Handy Hint

Can easily be adapted for your meat eaters by using real bacon and you could also sprinkle on grated Parmesan cheese.

    This is so easy to make and eat. It's filling, cheap and really nutritious. You can easily substitue ingredients to suit the most difficult tastes of your family. Most supermarkets will sell all these ingredients. If you have any left over then you can have it for lunch yourself the next day!
