Tofu and tomatoes

  • 1 medium onion diced

  • 1-2 tbsps sunflower oil (for frying)

  • 2 cloves garlic thinly sliced

  • 2-3 medium tomatoes chopped and deseeded

  • 400g tofu cut into 1cm cubes

  • 1 pinch sweet or chilli paprika

  • 1 bunch parsley finely chopped


  1. Soften the onions in a non-stick pan with a little oil, on a low heat for about 10 minutes.
  2. Add the tomatoes, stir, cover the pan and leave for about 5-10 minutes, stirring occasionally
  3. Then, add the garlic, the tofu, increase the heat a bit, stir fry for 3-4 minutes, sprinkle the paprika, turn the heat off but leave on the hob and stir until covered evenly with the paprika.
  4. Finish with the chopped parsley and serve. After I put some aside for my baby, I add some salt or soy sauce for the adults.

    The whole family enjoys this recipe! And the ingredients can always be substituted or things added like steamed broccoli, or peas, or sweet corn, the list is endless!
