Apple and raisin chutney

  • 2 tsp salt

  • 900g soft brown sugar

  • 1 tbsp ground ginger

  • 1 lemon juiced

  • 1 tbsp mustard seeds

  • 900ml cider or malt vinegar

  • 2 cloves garlic peeled and crushed

  • 4 onions peeled and finely chopped

  • 450g raisins

  • 1.8 kg apples peeled, cored and chopped


  1. Add the apples, onions, garlic, lemon juice, mustard seeds and 590ml of the vinegar to the boil.
  2. Simmer for 1 hour.
  3. Add the raisins, ginger, salt, sugar and the remaining vinegar to the pan.
  4. Simmer until thick.
  5. Pour into clean, hot jam jars and cover. Store for 6-8 weeks before eating.

Handy Hint

You can skip the apple peeling if you want and it doesn't make too much of a difference!
