  • 150ml mayonnaise

  • 3 eggs hard boiled, chopped

  • 1 tsp horseradish or use hot English mustard

  • 500g potatoes like jersey royals, scrubbed, cut into bite-sized pieces if big, otherwise leave them whole

  • 1 bunch fresh chives finely chopped, or use spring onions

  • 1 tbsp lemon juice


  1. Boil the potatoes until tender.
  2. In a bowl, gently mix together the potatoes, eggs, mayonnaise, horseradish or mustard.
  3. Season to taste.
  4. Add the lemon juice and adjust the seasoning.
  5. Snip the chives over the salad and fold in. Serve with a BBQ, or as part of a summer meal.

Handy Hint

Make large quantities and eat the next day with a lightly steamed fish.

    This may be gluten free depending on the mayonnaise used. If you're making you own, it usually is.
