Ingredients

  • pinch salt and pepper

  • 1 tbsp olive oil

  • 1 vegetable stock can

  • 1 red pepper Chopped

  • 1/2 tsp dried oregano

  • 1 tbsp cider vinegar

  • 1 clove garlic minced

  • 1 medium red onion

  • 1 handful fresh coriander

  • 300g white rice

  • 2 tins black beans

  • 4 Lime wedges

Method

  1. Cook the rice as instructed. Heat the oil in a large saucepan over a medium heat. Add the onion, garlic, and pepper, stirring occasionally, for about 8-10 minutes.

  2. Add the beans, broth, vinegar, and oregano, mashing the beans until slightly thickened, for 6-8 minutes. Season with salt and pepper.

  3. Fluff the rice with a fork and serve the beans over rice with the lime and and coriander.
