Crunchy cheese straws

  • 2 tbsp butter softened

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 pinch cayenne pepper

  • 2 handfuls cheese any hard variety, grated

  • 100g plain flour sifted

  • 100g Wensleydale cheese


  1. Mix the flour, salt, baking powder and cayenne pepper in a bowl. Add the butter and cheese, stirring until the mixture is crumbly.
  2. Sprinkle 80ml cold water into the mixture and mix with a fork until the dough is solid and doesn't stick to the bowl.
  3. Roll into a rectangle about 30cm wide. Use a knife to slice the flat dough in half horizontally. Then cut the dough into 2cm-wide strips.
  4. Carefully pick up each strip and twist it a couple of times to make the straws. Lay the straws on a non-stick baking tray about 2cm apart.
  5. Bake the straws in a preheated oven at 220C/Gas Mark 7 for 10 minutes or until they go slightly brown.
  6. Cool the twists on a wire rack before serving.

Handy Hint

Great served with a dip for a bite or with fresh tomato salsa and olives.
