  • 140g self-raising flour

  • 140g butter

  • 50g icing sugar

  • 140g caster sugar

  • 1 tsp baking powder

  • 2 large eggs

  • 2 ripe bananas


  1. Heat oven to 180C/ 160C fan/gas 4. Butter a 21b loaf tin and line the sides and bottom with baking parchment. 2. Cream the butter and sugar till light and fluffy, then slowly add the eggs with a little flour. Fold in the remaining flour, baking powder and bananas. 3. Pour into the tin and bake for 30 minutes until a skewer comes out clean. Cool in the it for 10 minutes then remove to a wire/ cooling rack. 4. To make icing, mix 2-3 teaspoons of water with 50 grams of icing sugar. Drizzle on top and decorate with banana chips! Enjoy!
