Chicken and veg kebabs

  • 1 tbsp rapeseed oil

  • 450g chicken breast

  • 2 cloves of garlic

  • 2 green pepper

  • 12-15 bamboo skewers

  • 2 tbsp light soy sauce

  • 1 x 340g tins pineapple chunks

  • 1 bag cherry tomatoes or baby plum tomatoes


  1. To marinade the chicken and place it into a dish with the soy sauce and garlic. Open the tinned pineapple and separate the juice from the pineapple chunks. Set the chunks aside and add the juice to the marinade. Cover the chicken and leave for at least 20 minutes - overnight if possible.
  2. Preheat the oven to 200c and brush or spray a baking tray with oil.
  3. Prepare the skewers by placing three pieces of tomato, pepper and chicken onto each skewer, then placing on the baking tray.
  4. Bake in the oven for around 12-15 min or until the chicken is fully cooked.
  5. Serve with brown rice as a main meal or salad as a lunchtime treat.

    You method is very detailed. Soak the bamboo skewers fist maybe better. There are a post for reference. [[ How to Soak Bamboo Skewers?]]
