  • 1 tsp bicarbonate of soda

  • 2 tsp baking powder

  • 1 pinch salt

  • 75g soft brown sugar

  • 2 tbsp honey

  • 2 tsp demerara sugar

  • 175g plain white flour

  • 125g sunflower margarine

  • 2 tbsp low fat yoghurt

  • 2 large eggs

  • 60g walnuts

  • 2-4 ripe bananas

  • 100g sultanas

  • 1 tea bag (green tea)


  1. Put the green tea bag in a pan with 100ml of water and simmer until 75ml remains. Add the sultanas to the tea, cover and leave to soak for one hour or until most of the liquid has gone. Then drain.
  2. Preheat the oven to 170c and lightly grease a 1 kg loaf tin.
  3. Sift the flour, baking powder, bicarbonate of soda and salt into a bowl.
  4. In another bowl, cream together the spread, sugar and honey with an electric whisk until pale and thick. Add the eggs in one by one, followed by the yoghurt and bananas. Finally fold in the flour mix, soaked raisins and walnuts.
  5. Pour into the prepared tin and sprinkle over the demerara sugar and bake in the oven for 60-70 mins. It should feel springy to the touch when cooked. Allow to cool in the tin fully before removing and cutting into slices to serve.
