Apple and oat pancakes

  • 40g butter

  • 1 tbsp caster sugar

  • 2 tsp baking powder

  • 1 pinch salt

  • 1 tbsp vegetable oil

  • 400ml semi-skimmed milk

  • 120g porridge oats

  • 2 large eggs

  • 1 large apple

  • 20ml apple juice

  • 3 apples (1 for batter and 2 for syrup), peeled, cored and diced


  1. Put the milk, eggs, oil and sugar in a bowl and mix. Add the oats, flour, baking powder and salt and mix until you have a smooth batter. Then add one of the apples and mix.
  2. To make the syrup, heat the butter and apple juice together until melted, then add the apple and cook until it's soft but still holding shape.
  3. Cook the pancakes by heating a non stick pan on a medium heat and rubbing a little butter over the surface using kitchen paper. Spoon in the mix and cook two pancakes at a time. Gently cook until bubbles appear on the top, then flip and cook for a further 1-2 mins.
  4. Serve the pancakes (two per person) with a little of the apple syrup spooned on the top.
