  • 225g self-raising flour

  • 400g mixed dried fruit If you want to make it extra fruity add an extra 25 grams

  • 175g demerara sugar

  • 150ml tea The tea must be hot

  • 1 medium egg


  1. Mix together the dried fruit, sugar and hot tea. 2. Cover and leave overnight. 3. Heat oven to 160c, 325F, Gas Mark 3. Grease and line the base of a 1kg (2lb) loaf tin. 4. Add the egg, beat well then stir in the flour. 5. Place the mixture into the tin and bake for about 1 1/2 -1 3/4 hours until firm. Enjoy!

Handy Hint

You can reduce the sugar by 2 ounces and it's still nice and sweet because of the fruit.
