125g self-raising flour
125g caster sugar
4 tbsp golden syrup
- Put the golden syrup in the bottom of a glass dish - either a pudding basin or one of those little Pyrex ones - add a bit of lemon juice if wished.
- Make up the sponge mix with the remaining ingredients
- Spoon the sponge mix over the syrup and microwave until done - probably between 4 to six minutes, I guess but just check every now and then.
This continues to cook a little once taken out, so bear that in mind.
