Microwave golden syrup sponge pudding

  • 125g self-raising flour

  • 125g butter

  • 125g caster sugar

  • 4 tbsp golden syrup


  1. Put the golden syrup in the bottom of a glass dish - either a pudding basin or one of those little Pyrex ones - add a bit of lemon juice if wished.
  2. Make up the sponge mix with the remaining ingredients
  3. Spoon the sponge mix over the syrup and microwave until done - probably between 4 to six minutes, I guess but just check every now and then.

Handy Hint

This continues to cook a little once taken out, so bear that in mind.

    Agree re eggs - haven't tried without but I make similar recipe, 2 eggs for these quantities
