1/4 tsp caster sugar
1/2 tsp salt
112g strong white bread flour
3 1/2g Sachet fast-action yeast
- Heat the milk together with 55 ml of water in a small saucepan (make sure the water isn't too hot).
- Meanwhile put the flour, salt, yeast and sugar into a mixing bowl and make a well in the centre. When the milk mixture is ready, pour it into the mixing bowl and stir it in in with a metal spoon to make a smooth batter.
- Cover the bowl with a clean tea towel and leave in a warm place. Heat the oven to 150c/130 fan/ gas 2. Brush the insides of the crumpet rings with a little melted butter. Put a flat griddle pan or a large heavy-based frying pan over a medium heat and brush with melted butter.
- Arrange all four crumpet rings on the pan and spoon three or four tablespoons of the batter into each crumpet ring. Turn down the heat to low and cook for 10-15 mins. After 10 minutes flip the crumpet rings over. Re-grease the crumpet rings and repeat with the remaining mixture. Then put in the oven for 5-10 minutes. Enjoy!
