Fruit and nut energy balls

  • 1/4 tsp vanilla extract

  • 250g mixed dried fruit or raisins

  • 50g cacao powder for rolling

  • 200g mixed nuts and seeds

  • 50g unsweetened coconut


  1. Place all the ingredients into your food processor
  2. Blend until everything is chopped
  3. Remove the blade (if you can)
  4. Spoon out small amounts of the mixture and roll into little balls with your fingers
  5. Continue until all the mixture has been used
  6. Set the balls aside on a plate
  7. Fill a small bowl with either coconut or cacao powder and roll the balls in it to cover (a few at a time)
  8. Cover the plate with cling film and leave to chill

Handy Hint

Leave out the coconut and cacao powder if you don't like it/prefer them plain.
