  • 250g self-raising flour

  • 50g caster sugar

  • 100ml buttermilk

  • 1 medium free range eggs

  • 50g unsalted butter

  • good pinch salt


  1. Heat your oven to 220C/425F/Gas Mark 7. Mix the flour, salt and sugar in a mixing bowl. Add the butter and toss the pieces into the flour lifting them up to the top of the bowl until fine breadcrumbs. Shake the bowl to check there are no lumps visible.
  2. Beat the egg and the buttermilk together in a bowl. Then pour it into the crumbs and mix to a soft dough. The dough should look a bit rough and shaggy. Don't overwork it - a light touch is vital.
  3. Turn the dough onto a floured worktop. Lightly flour your fingers and pat the dough to about 3cm thick. Cut the dough into rounds. Bake on a tray for 12 minutes. Enjoy!
