Spaghetti fritter

  • 2 handfuls spaghetti cooked (left over)

  • 2 eggs

  • 1 handful frozen peas

  • 1 handful vegetables cooked and finely chopped


  1. Store the leftover spaghetti in the plastic bag. Chuck in veg.
  2. Obtain one clumsy child. Crack eggs straight in the bag and seal top with clip. Let child squidge bag while you warm oil in pan.
  3. Then plop content of bag into pan. Leave for 5 minutes or so on one side, then use dinner plate to flip onto do other side, so you end up with a frittata.

    Love it, sounds like my kind of recipe where you can use up bits and pieces and disguise them in the next meal!
