Goat's cheese tartlets

  • 9 cherry tomatoes

  • 1 medium eggs

  • 375g ready-made puff pastry

  • 6 basil torn into small pieces

  • 2 small goat's cheese round (each about 100g, the ones in a long roll covered in herbs are best for this)


  1. Preheat oven to 220C / 425F.
  2. Unroll the pastry and cut into 7 inch squares.
  3. Cut the goats cheese into 6 thick slices (horizontally as though slicing a sausage).
  4. Place a slice in the centre of each pastry square.
  5. Put a a few halved tomatoes on top of each one, add some torn basil leaves.
  6. Brush the edges of the pastry with beaten egg, pinch and then pull up around the sides.
  7. Brush over with beaten egg and place in the oven for 15-20 mins until the pastry is risen and golden brown.
  8. Serve with salad leaves.

Handy Hint

Make sure there is enough space between the tartlets on the baking tray so they don't expand into each other

    This is a fantastically easy starter or light lunch and always works. You can put the tartlets together and then put them in the oven while sorting out drinks. It can be adapted with other types of cheese if you don't like goats cheese. You could also use shortcrust pastry and make them more like parcels rather than open tartlets. Best of all the mediterranean flavours make me think of summer holidays even when it's grey and rainy outside.
