Grilled aubergines with mint dressing

Ingredients

  • 50ml olive oil

  • 1 tsp caster sugar

  • 1 tbsp balsamic vinegar

  • 1 medium aubergine

  • 1 tsp white wine vinegar

  • 2 cloves of garlic crushed

  • 1 handful mint leaves torn

Method

  1. Slice aubergines longway (about 5mm thick), and paint with olive oil & season
  2. Grill aubergines and then toss in dressing
  3. Serve at room temperature

Best made a few hours before the BBQ
