  • 1 large onion

  • 400g borlotti beans

  • 2 sticks chopped celery

  • 2 carrots

  • 2 dollops tomato puree

  • 1 vegetable stock cube

  • 400g kidney beans

  • 400g chickpeas

  • 1 butternut squash, chopped and peeled

  • 100g lean bacon or chorizo optional


  1. Gently fry the onion in a large pan till softened (if you're having bacon or chorizo, add it now).

  2. Add the carrot and celery to the pan.

  3. Make up the vegetable stock, then add to the pan along with the butternut squash.

  4. Bring to the boil, then simmer til the butternut squash is soft.

  5. Drain the beans, then add to the pan.

  6. Simmer for 5 minutes, then serve.
