  • 1 or 2 cloves of garlic

  • 1 sweet potato

  • 1000ml passata

  • 1 onion

  • 1-2 carrots

  • 1 handful spinach

  • sprinkle of dried herbs or basil

  • 1-2 grated courgettes

  • a glug of olive oil


  1. Chop up the sweet potato, garlic and onion.
  2. Fry up for a few mins, in the base of a saucepan, then pour on passatta and add Marmite/veg stock cube.
  3. Cook passata until sweet potato is nearly soft.
  4. Add carrot, courgette, spinach, basil/herbs and any other veg and cook until all veg and sweet potato is soft.
  5. Allow to cool, then blend smooth - I sometimes also run it through a sieve to get it really smooth.
