  • 2 cloves of garlic

  • 4 pork chops

  • 500g potatoes cut into chunks

  • 125g mushrooms halved

  • 1 courgette sliced into large chunks

  • 1 handful fennels/carrots/peppers sliced

  • 100ml water

  • 2 sprigs thyme


  1. Put pork chops, sliced potatoes, fennel, carrots, mushrooms, yellow or red peppers, garlic, thyme, salt and pepper plus the cup of water in a roasting tin.
  2. Cover it with foil. seal the foil well and put it in the oven and bake at 200C for 40 mins. T
  3. Take foil off and bake for another 15 mins to brown off and serve.
    Really succulent and tasty.
