Simple fish pie with fennel

  • 4-6 Fillets of white fish

  • 2 red onions, chopped

  • 1 head of fennel, chopped

  • 4 garlic cloves, chopped

  • 5 potatoes

  • 200g butter, melted


  1. Peel onions and chop
  2. Finely chop garlic and fennel
  3. Put onions, garlic and fennel into a baking dish and drizzle with one third of the melted butter, mix it all about to make sure it's coated well. Put in oven for 15 minutes until it all caramelises
  4. Meanwhile, peel potatoes, and slice into round discs
  5. Add fish to onions, garlic and fennel and top with potatoes. Drizzle with the remaining butter
  6. Squeeze lemon juice and black pepper over the top and return to the oven for 15 minutes
