  • 225g unsalted butter

  • 115g golden caster sugar

  • 125g plain wholemeal flour

  • 50g fresh root ginger

  • 100g plain white flour

  • 115g ground rice

  • 125g soft dried fig (stalks removed, finely chopped)


  1. Pre-heat oven to gas mark 4 and lightly grease baking sheet.
  2. Put the butter and the sugar into a food processor and whiz until blended.
  3. Finely grate the ginger and squeeze the lemon juice from it, setting the juice aside.
  4. Add the pulp to the processor with the flours and the ground rice. Blend until roughly mixed.
  5. Add the figs and blend for a few seconds until they are mixed in, but stil have some texture.
  6. Turn the dough onto a floured surface and knead lightly until smooth.
  7. Divide into 12-16 portions, roll into small balls and then lightly flatten them with your fingers to form the traditional ginger nut shape.
  8. Place them onto the prepared baking sheet and bake for 20-25 mins until pale golden.
  9. Allow to cool on the baking sheet.
