Simple Homemade Snack Bars

  • 50g desiccated coconut

  • 200g Dates

  • 50g Cashew Nuts (unsalted)

  • 2 tbsp Honey


  1. Blitz the cashews, coconut and dates together until it forms a fine grain texture.
  2. Add the honey and blitz again until all the ingredients are combined.
  3. Line a small square/rectangular dish or deep sided baking tray with greaseproof paper.
  4. Add the mixture and spread evenly aiming for a thickness of 1 cm.
  5. You will need to gently press the mixture into place so it is all combined.
  6. Place in the fridge for 2 hours or until the mixture has a firmer texture.
  7. Remove from the fridge and allow to stand for 5 minutes.
  8. Carefully remove the mixture from the dish using the greaseproof paper.
  9. Remove the greaseproof paper and cut the mixture evenly into 4 snack bars or squares.

Handy Hint

You will need to use a food processor for this recipe. You can add more flavours if you wish - some raisins or dried cranberries work well or even some chocolate chips. It is really easy to recreate your favourite flavours and they taste so much nicer than shop bought alternatives. You need to chill the snack bars for a couple of hours for the mixture to set. They do not need baking as the timings suggest - I could not change this from cook time to chill time!
