Easter Roast Breast of Lamb

  • 1 splash salt and pepper

  • 1/2 onion

  • 2 slices bread

  • 1 sprig parsley

  • 2 cloves garlic

  • 1 splash garlic powder

  • 1 sprig fresh thyme leaves

  • 500g Breast of Lamb or bigger


1 Put bread, garlic, onion and herbs into a blender. Whirl until desired coarseness.
2 Flatten the breast onto a work surface.
3 Spread the bread crumb along the center of the strip of breast of lamb
4 Roll it up gently and tie it with a string 3 or 4 places. ( I had to do it without the string because I had none left).
5 Heat up a pan. Gently place the lamb onto the pan and brown all around.
6 Transfer to a baking tray with some baby potatoes if desired.
7 Sprinkle some garlic granules, salt and pepper and roast in a preheated oven for 1hr 20 minutes at 180C.
