Colourful Coronation Carrot Salad

  • 7 medium carrots

  • 3 green onions

  • 4 tbsp pumpkin seeds

  • 10 dried apricots

  • 2 tbsp mayonaise

  • 2 tbsp yogurt

  • 2 tsp apricot jam

  • 1/4 bunches chopped coriander

  • 2 tbsp lemon juice

  • 1/2 tsp garam masala

  • 1/2 tsp curry powder

  • 1/4 tsp ground ginger

  • 1 pinch salt


Use a vegetable peeler to peel the carrots into strips and place them into a large bowl.
Slice the green onions and the apricots and add them to the bowl as well as the pumpkin seeds.
In a small bowl, combine the mayonnaise, yogurt, apricot jam and spices and mix.
Add it to the carrots and mix through.
The salad can be served right away but it is best served after it has sit for a few minutes (10-20). This will give you time to prepare the rest of your meal.

Handy Hint

This makes a great side dish and a complete meal if you top with some tofu, tempeh or even a piece of fish or chicken.
