  • 25g grated parmesan (optional)

  • 180g pasta shapes

  • 1 chopped red onion

  • 1 chopped red pepper

  • 3 tbsp red pesto

  • 1 tbsp tomato puree

  • 1 tbsp oil


  1. Cook pasta as per packet instructions then drain.
  2. Fry the lardons, onions and peppers in oil until lardons crisp and vegetables soften.
  3. Mix pesto and tomato puree through the pasta and serve topped with the lardon mixture and optional Parmesan.

Handy Hint

Great for lunch cold too.
