  • 1 tbsp oil

  • 180g pasta shapes

  • 1 chopped red pepper

  • 1 chopped red onion

  • 3 tbsp red pesto

  • 1 tbsp tomato puree

  • 25g grated parmesan (optional)

  • 90g Smoked Bacon Lardons


  1. Cook the pasta as per pack instructions then drain.
  2. Meanwhile fry the onion, pepper and lardons in a frying pan with the oil until the lardons begin to crisp and the vegetables are soft.
  3. Add the pesto and tomato puree to the pasta and stir through.
  4. Serve topped with the lardons and vegetables sprinkled with parmesan.

    I got the bacon lardons free from Tesco to trial and they were delicious hence why I added the brand name in the recipe.
