  • 100g trimmed celery heart

  • 6 rashers dry back bacon, diced

  • 450g onions, chopped

  • 3 cloves garlic, finely chopped

  • 100g red pepper, chopped

  • 1 tin chopped tomatoes

  • 1 tin bortolli beans in water

  • 1 tin cannellini beans in water

  • 1 tin butter beans in water

  • 1 chicken or vegetable stock cube

  • 2 tbsp olive oil

  • 228g Mattesons reduced fat smoked pork sausage


  1. Fry off the bacon, onions, garlic, celery and peppers in a large pan.

  2. Add everything else to the pan and enough water to just cover everything.

  3. Season and leave to simmer for 20 minutes. Remove from the heat and leave for an hour to rest for extra flavour. Re-heat before serving.
