  • 1 tsp dried dill

  • 100g frozen peas

  • 4 celery sticks, roughly chopped

  • 1 bag watercress, spinach and rocket salad

  • 1 medium potato, diced

  • 6 asparagus spears, roughly chopped

  • 1000ml vegetable stock

  • 1 handful fresh mint leaves

  • 1 handful fresh coriander, chopped

  • 1 handful fresh parsley, chopped

  • 1 onion, chopped

  • 1 cabbage, roughly chopped


  1. Heat a little oil in a pan and add the onion, celery, cabbage and asparagus. Cook for a few minutes, then add the rest of the ingredients.

  2. Pour over the stock and simmer for about an hour, then whizz it up with a hand blender.
