Fast day venison meatballs in spiced tomato sauce

  • 1 tsp dried oregano

  • 1 beef stock cube

  • 1 tin tinned tomatoes

  • 1 tsp olive oil

  • 1 large onion, chopped

  • 2 cloves garlic cloves, chopped

  • 1 fresh red chilli, finely chopped

  • 250g venison, minced

  • 1 egg, beaten

  • 2 tbsp plain flour


  1. Heat the olive oil in a pan and add half the onion, garlic, chilli and oregano. Cook for a few minutes, then add the tinned tomatoes and crumble in the stock cube. Leave to simmer.

  2. To make the meatballs, mix the other half of the onion, the venison, the beaten egg and the plain flour together. Wet your hands to stop the mixture sticking, then mould into balls. You should make about 12 meatballs, enough for two portions.

  3. Brown the meatballs in a frying pan, then add to the simmering sauce to cook through. This should take around 10 minutes.
