Fast day Greek salad with oregano and mint

  • 1 tsp dried oregano

  • 2 tbsp olive oil

  • 2 tbsp red wine vinegar

  • 1 pinch of caster sugar

  • 1 lemon, juice of

  • 1 handful of flat-leaf parsley, roughly chopped

  • 1 handful of mint leaves, roughly chopped

  • 400g best-quality ripe tomatoes, quartered

  • 1 red onion, sliced

  • 1 cucumber, peeled and cut into chunks

  • 1 small cos lettuce, leaves torn

  • 12 Kalamata olives

  • 200g good-quality feta cheese, broken into pieces


  1. Whisk together the olive oil, red wine vinegar, caster sugar, lemon juice, mint leaves, parsley, oregano and salt and pepper to create the salad dressing.

  2. Toss together the rest of the ingredients to form the salad and dress.
