Sweet peppers with feta and walnuts

  • 2 tbsp runny honey

  • 0.5 tsp cayenne pepper (or chilli powder)

  • 4 sweet red peppers

  • 2 handfuls broken walnuts

  • 1 block feta


  1. Cut the stalks off the peppers and remove seeds as much as possible.
  2. Put the peppers on their sides on an oiled baking sheet in a very hot (preheated) oven for 7 minutes.
  3. Mix together the walnuts, honey and cayenne, crumble in the feta and mix together.
  4. Remove from oven and cool, remove skins, if using long thin bell peppers make one slice in the peppers so you can open them out flat on the baking sheet, spread the feta and walnut mix over the opened up peppers.
  5. If using regular red peppers, put the filling inside the peppers.
  6. Place in the very hot oven for about 8 minutes, keep checking.
  7. Then try to slide the slippery devils off the tray on to plates.

    Delicious! Skinning the peppers is fiddly but delicious even if you skip that part. You must wait till the skins are burned/bubbly then they come off easily

    Honey is not low carb. The amount in this recipe is nearly 35g carbohydrate for the honey alone. 18g in the peppers, 4g in the feta and at least 4g in the walnuts. 61g for the recipe so per portion as suggested it's 30g which is not really low carb.
