  • few pinches salt and pepper

  • 3 cloves of garlic

  • 1/2 red onion

  • 1 tbsp fresh thyme leaves

  • 3 sweet potatoes diced

  • 1 pint chicken stock


  1. Roast the diced sweet potato to an oiled baking tray for 20 mins or until soft
  2. Add the red onion and garlic for the last 10 mins of roasting
  3. Transfer all to a saucepan and add the stock
  4. Gently blend until smooth
