Slow cooker chocolate brownies

Ingredients

  • 125g caster sugar

  • 1 tsp baking powder

  • 110g dark chocolate

  • 60g unsalted butter cut into cubes

  • 30g cocoa powder

  • 110g milk chocolate

  • 3 eggs beaten

  • 1 tsp sea salt

  • 125g chocolate chips

  • 100g walnuts roughly chopped

  • 160g plain flour

Method

  1. Grease the slow cooker with a splash of oil and line the bottom with baking paper.
  2. In a small bowl, mix together the flour, baking powder, cocoa and salt.
  3. Put the butter and chocolate (save the choc chips for later!) in the microwave and heat until melted, removing to stir every 30 seconds or so.
  4. Add the sugar and beaten eggs to the butter and chocolate mix and stir together.
  5. Fold in the flour mixture, then add the walnuts and chocolate chips.
  6. Transfer the mixture into the slow cooker.
  7. Cook on a low heat for about 3 and a half hours with the lid on, then uncover and cook for a further half an hour
  8. Remove from the cooker and leave to cool on a cooling rack, before cutting into pieces.

    I tried this at the week end. After 3.5 hours on low in our slow cooker the sides of the brownie were burnt to a crisp, but that could just be our slow cooker, I'm not that proficient with it. Feedback from dd and dh was very good (apart from the burnt bits) but it was a bit over cooked and dry. Next time I'd give it 2.5-3 hours in a low setting and then the half hour with lid on and it would be delicious. Very easy to make.
