Carrot, spinach and coconut salad with hot  griddle halloumi - from Mimi Spencer's Fast Beach Diet

  • olive oil spray

  • 100g reduced-fat halloumi sliced

  • salt and pepper to taste

  • 1 bag baby spinach leaves roughly chopped

  • 2 carrots peeled and grated

  • 25g fresh coconut

  • 1 tbsp olive oil

  • 1 tsp black mustard or nigella seeds

  • 1 lime juiced

  • 1 orange juiced

  • salt and pepper to taste


  1. Spray halloumi slices with a little olive oil, season and sear in a hot griddle pan for 30 seconds on each side.
  2. For the salad, combine the spinach leaves, carrots and fresh coconut. For the dressing, combine the olive oil, black mustard or nigella seeds, lime, orange, and salt and pepper.
  3. Serve the dressed salad piled on a plate with the hot halloumi on top.
