  • 1 lemon zest and juice

  • 4 young courgettes peeled into ribbons

  • 100g fresh or frozen peas just-cooked

  • 100g pea shoots

  • 200g ricotta cheese

  • 2 tbsp extra virgin olive oil

  • 1 tsp runny honey

  • salt and pepper to taste


  1. Combine lemon zest and juice, olive oil, honey and salt and pepper to make the dressing.
  2. Assemble the salad with the rest of the ingredients.
