  • 1 tbsp balsamic vinegar

  • 2 tsp Dijon mustard

  • 1 garlic clove crushed

  • 1 tbsp good olive oil

  • 1kg watermelon

  • 200g low-fat feta cheese

  • 1 red onion thinly sliced

  • handful fresh mint leaves roughly chopped

  • freshly ground black pepper and sea salt to taste


  1. Combine the vinegar, mustard, garlic and olive oil to make the dressing.
  2. Assemble the rest of the ingredients to make the salad.
