1/4 bunch of coriander
2 Garlic cloves
1/2 Green capsicum
1 tsp Olive oil
1 tsp Butter
1/2 Cup Cheddar Cheese
2 tsp Lime juice
Dice the tomatillos, scallions, capsicum and garlic.
Heat the oil and the butter in a saucepan over medium heat.
Saute the tomatillos, garlic, scallions, stems of the coriander and capsicum until soft.
Once cooked, squeeze in a little lime juice, set the pan aside and leave it to cool for a few minutes, If you add the eggs now, they will cook too quickly.
Whisk the eggs.
Return the pan to a low/medium heat and add the eggs to the tomatillo mixture.
Slowly stir with a wooden spoon until the eggs are set the way that you like it.
Stir in the cheese, remove from heat and put a lid on the pan.
Leave the pan for a couple of minutes and allow the cheese to gently melt in. Take this time to make some toast and maybe a little veggie bacon.
Remove the lid, sprinkle with coriander and serve!
