Budget-friendly spicy beanburger

  • 1 chilli optional

  • 1 medium sweet potato

  • 1 tin kidney beans

  • 1 sachet of fajita seasoning

  • 1 handful of frozen sweetcorn

  • 1 pepper


  1. Prick the sweet potato all over and cook in the microwave until soft. Allow to cool a little.
  2. Pour boiling water over the sweetcorn after placing it in a cup.
  3. Peel the skin off the sweet potato and mash the flesh in a bowl.
  4. Chop the pepper and chilli and add to the bowl.
  5. Add the drained sweetcorn, half the tin of kidney beans, half the fajita sachet and salt & pepper.
  6. Lay out a piece of clingfilm and dollop on a couple of spoons of the mixture. Shape into a burger and wrap up. Continue for the rest of the mixture and freeze.

Handy Hint

You can make a Moroccan version with chickpeas and your own choice of spices. Add in any frozen veg you have to hand.

    Turkey, I cook mine from frozen on a pizza stone. They are a bit fragile so I use a fish slice to transfer to the plate. You could add an egg if you wish.

    Is there something missing from this recipe? I made this and they all fell apart they didn't hold as burgers. Are you supposed to cook from frozen? 25 mins in the oven?

    This is a very cheap recipe, easy to make and cook straight from the freezer.
