  • 2 tsp salt to taste

  • 4 slices green chilli

  • 8 tbsp sunflower oil plus extra for greasing

  • 2 sprigs curry leaves optional

  • 3 tbsp chilli powder to taste

  • 1 tsp turmeric powder for colour

  • 1 whole chicken (washed and cut into small pieces)

  • 1 handful fresh coriander (chopped)

  • 3 tbsp ginger and garlic paste

  • 3 tbsp chicken masala


  1. Add the ginger and garlic paste, salt, turmeric powder, chilli powder, coriander and some chicken masala to the chicken.
  2. Mix well and finally add 3 tbsp of oil and marinate it well.
  3. Set it aside for 30 minutes, or ten at the very least.
  4. Using a frying pan or a tawa, cover and cook the mixture on a medium flame for 10-15 minutes, checking occasionally.
  5. When you see the chicken is almost cooked, remove the lid and cook on a high flame to evaporate the chicken stock, stirring constantly. Remove from heat and set aside.
  6. Add the rest of the oil to another pan and heat it up with a high flame.
  7. Add slit green chillies and curry leaves and let them fry for 10 seconds.
  8. Now add the chicken slowly (watch the oil might spatter as there might be some chicken stock dripping into this hot oil).
  9. Lower the flame to medium and keep an eye on the chicken.
  10. Stir occasionally until the chicken is a darker golden brown and decorate it with fresh coriander (optional).
  11. Best served hot, with rice, roti or (even better) with a drink.

Handy Hint

If you want to make the chicken masala yourself, you will need 8 cloves; 1 large cinnamon stick; 4 cardamon; a few peppercorns and a half-cup coriander seeds (say a handful). Dry roast the ingredients for a few minutes until you get the aroma out of them, then grind the dried ingredients into a powder.
