Tomato-tastic chicken n' rice

  • few pinches salt and pepper

  • few generous splashes olive oil

  • 200g arborio rice

  • couple bunches fresh thyme

  • 4 Chicken thighs

  • 1/2 chopped onion

  • 2-3 tins tomatoes

  • 3 garlic cloves, chopped or crushed


  1. Heat up a large, heavy-bottomed pan with lid.
  2. Add the olive oil and onion.
  3. Add garlic and chicken to brown.
  4. Once looking and smelling lovely, add the tomatoes, thyme and rice and leave to simmer for aaaaaages. The longer the better, but at least until the tomatoes have turned sweet and a bit sticky.
  5. When the rice is tender and the chicken is cooked through, serve up with salad.
