  • 1 pinch salt and pepper

  • 2.3kg leg of lamb

  • 4 fresh rosemary sprigs chopped

  • 4 garlic cloves

  • 2 tbsp olive oil


  1. Preheat oven 180 C
  2. Crush garlic and rosemary and oil and mix together
  3. Rub into lamb
  4. Bung in oven.

Handy Hint

I think Jamie Oliver's approach of putting meat direct on to the oven bars and letting the juices drip below into tray of potatoes is just delish but you can just pop the leg of lamb into a tray if you'd rather not mess up your oven.
